Mondays always seem to be the most exhausting day of the week. Getting back into the swing of things after the weekend is tough and Friday seems like its years away. That’s why I’m partial to some good leftovers for Monday night dinner. I cook in batches over the weekend so I can easily throw together a healthy dinner after work without too much work and the less washing up there is… the better!
I whipped up this delicious yogurt and lime dressing to give a little twist to the yummy Jerk Lentil Burgers I made yesterday. They kept extremely well in the fridge and were easily re-heated in the oven.
I threw some halloumi on the grill and mixed up some barley, wheatberries, spelt and rice with a little lemon, olive oil and pomegranate seeds.
Yogurt & Lime Dressing
150g Low Fat Natural Yogurt, 1/4 tsp ground coriander, zest of 1/4 lime, juice of 1/4 lime, a drizzle of olive oil, sea salt
- Combine the yogurt, coriander, lime juice and zest in a bowl. Add just a small drizzle of olive oil and mix until well incorporated. Season with sea salt to taste. A small sprinkle goes a long a way. Garnish with a little extra lime zest for color.
