Healthy Blueberry Muffins

I’ve been on a bit of a health kick lately – doing crunches and squats, making sure to keep hydrated and most importantly eating well. I can’t deny that I have a sweet tooth and I like to nosh throughout the day so I’m constantly looking for tasty and healthy recipes for snacks and nibbles.

I came across a recipe for healthy blueberry muffins in my Hemsley + Hemsley cookbook which I really wanted to try out. I love a good muffin and often the ones you get at Pret or Starbucks are loaded with sugar and god knows what else… which is fine for every once in a while but these looked like a healthier alternative.

3 eggs, 2 tbsp melted coconut oil or butter, 2 tbsp maple syrup, 1/2 tsp vanilla extract, 1 tbsp apple cider vinegar or lemon juice, a pinch of sea salt, 40g coconut flour, 1/4 tsp bicarbonate of soda, 150-200g blueberries (rinsed and dried thoroughly).

  1. Preheat the oven to 200 degrees Celsius. Line a six-hole muffin tin with baking parchment liners or squares of baking parchment.
  2. Beat the eggs in a large bowl and then stir in the melted coconut oil or butter with maple syrup, vanilla, apple cider vinegar or lemon juice, and salt.
  3. Sift the coconut flour and bicarbonate of soda into the batter and fold in well to ensure there are no lumps. The batter will be very runny – this is totally normal!
  4. Once blended divide the batter between the paper liners in the tin and then distribute the blueberries evenly between the liners. Push most of the berries down into the batter and leave a few studding the top.
  5. Bake in the center of the oven for 20-30 minutes. (The recipe called for 20 but my oven took just under 30 minutes to get the job done).
  6. Remove from the oven and transfer to a wire rack to cool completely.

If you’re looking for a sickly sweet muffin then I would recommend a more traditional recipe. However, these muffins are a complete delight. They get their sweetness from the blueberries, are soft and airy and have a lovely, light coconut flavor. So if you are looking for a healthier alternative to the every day blueberry muffin, these are great!
