Faux Pho Recipe

I can’t claim to be a wiz at Asian food, but I’m working on it! Sometimes after a long day I really crave those light, aromatic flavors that are so warming for the soul.

Faux Pho: For this dish I use a really good chicken stock as the base and simmer lightly with kafir lime leaves, lemon grass, fresh ginger and a little garlic. I usually throw in some grilled chicken breasts, rice noodles and a squeeze of lime and fish sauce at the end. Garnish with spring onions and coriander.

A drizzle of Sriracha goes a long way for those who like a bit of heat! For more spice, finely chop some Thai chilies and simmer with the broth.
