Summer Lovin’

Summer fills me with joy and energy. Long days, Sunday BBQs with friends, big juicy plump berries and the prospect of jetting off to some faraway, exotic land for a holiday!

I love visiting farmers’ markets during the summer. The long days make it much easier to wake up early and when the sun is shining I love getting out of the house. Heading to the market early in the morning to pick up some fresh fruit and veg is a great excuse to get out of the house.

One of my most frequented farmers markets is Pimlico Square Farmers Market. My mom and I meet before it opens and have a lovely breakfast at Daylesford first and then hit the market. Although it’s a small market, compared to others, it’s packed full of amazing suppliers selling fresh, quality and delicious food.

The farmers’ market is always the best place to get some last minute inspiration for a great meal.

I recently whipped up this delicious and easy  courgetti with scallops after a visit to the market.I seared some scallops in butter with salt and pepper. Then I wilted some courgetti with garlic, lemon, tarragon, saffron and butter. Whilst rummaging through my fridge I found some pancetta in the fridge so I quickly fried the pancetta andIMG_2504 stirred through the courgetti with some fresh baby plum tomatoes!

That’s the great thing about visiting a food market. You never know what you might find and the seasonal produce varies from weekend to weekend and even from market to market.

Whilst at my local farmers market this Saturday I picked up some gorgeous red cherries. I could eat cherries like candy if they were in season all year round.

I felt like serving a special summer treat so I brewed some Taylors Rose Lemonade Infusion, stirred in some honey and popped it in the fridge for a few hours until it had cooled sufficiently. Once nice and icy-cold I served it in champagne saucers, garnished with a cherry!
