Summer means friends and family dropping by, which means sometimes you have to throw together delicious snacks or a meal quickly and without much notice!
This is when I like to do an easy “garbage” salad, as my mom calls it. Boil some pasta, throw in some baby plum tomatoes, pesto, a few green leaves, cheese, cold cuts or leftover chicken and voila! This can be made easily with practically anything you have laying around in the fridge.
Alternatively, if you have any puff pastry laying around – roll it out and spread some pesto on the base. Layer with all your favorite veggies, cheese, meats, etc.
I like to keep a jar of homemade pesto in the fridge for just such occasions.

Walnut & Sage Pesto
1/4 cup parsley, 1/4 cup mint, 1 cup sage, 2 garlic cloves, 1/2 cup toasted walnuts, 1/2 cup grated Parmesan, 1/2 cup extra virgin olive oil, 1 tsp lemon zest, 2 tbps fresh lemon juice, salt & pepper.
Combine first six ingredients in the bowl of a food processor and blend to a rough puree. Make sure to scrape the sides of the bowl so all ingredients are incorporated. With the blender running, slowly add the olive oil. Finally, add the lemon zest, lemon juice and salt & pepper. Adjust seasonings to your preference.
